insert into table

Depending on what client you're using you may make it work with this:
insert into myTable values ( 'Henderson\& Associates');

If this does not work (with SQLPlus it won't) you may have to do this:

SQL> set escape \
SQL> insert into myTable values ('Henderson\& Associates');

1 row created.

If this still does not work try the alternative approach:

SQL> set escape ON
SQL> insert into myTable values ('Henderson\& Associates');

1 row created.
